Herb and Potato Pancakes
This recipe is adjusted from Raley's Something Extra recipe Bacon and Potato Pancakes. I adjusted to be vegetarian by omiting the bacon and adding herbs.
INGREDIENTS
2 cups Bisquick baking mix
1 cup shredded potatoes
3/4 cup milk
1/2 cup grated Cheddar cheese
1/4 cup of chopped fresh herbs
1 medium cooked potato, peel removed and shredded
1 egg
2 tbsp. butter, divided
DIRECTIONS
Combine all ingredients except butter just until blended. Working in 2 batches, melt 1 tbsp. butter in a large skillet over medium heat. Pour scant 1/4 cup batter into hot skillet for each pancake and cook for 3 to 5 minutes
on each side. Serve with additional butter if desired.
Makes about 12 pancakes.
