Cranberry Cream Cheese French Toast
This recipe is from Raley's Something Extra Magazine. I love cranberries in Autumn time and even in Christmas time.
INGREDIENTS
8 slices thick cut French toast bread.
1/2 cup whole berry cranberry sauce
1/2 cup softened cream cheese
3 tbsp. glazed walnuts
3 eggs
1 cup fat-free half & half
2 tbsp. sugar
1/2 tsp. cinnamon
Powdered sugar (optional)
DIRECTIONS
Make a slit (to form a pocket) in each slice of bread. Stir together cranberry sauce, cream cheese and glazed walnuts in a small bowl. Spoon equal amounts of mixture into each pocket. Whisk together eggs, half & half, sugar and cinnamon. Dip each bread slice in mixture, turning to coat both sides. Cook in a lightly buttered large skillet until golden brown on both sides. Garnish with a dusting of powdered sugar, if desired.
Makes 6 servings.
