Peel and gently press garlic.  Add garlic and red  pepper flakes. &lt;br /&gt;&lt;strong&gt;CUT &lt;/strong&gt;cherry tomatoes in half and tear basil into small  pieces.  ADD cherry tomatoes and basil to the skillet.  Simmer for five  minutes.  Season with salt.  Discard garlic cloves.&lt;br /&gt;&lt;strong&gt;COOK &lt;/strong&gt; Angel Hair pasta according to the directions.   Drain and toss with sauce. Mahi  Mahi fillets (per person) cut into approximately 4 long  strips (Tip:   Costco has frozen wild Mahi Mahi fillets individually  packaged.  Each is  about 1/2 lb.)&lt;br /&gt;OR you can use 2 lb tilapia (or  any firm white fish)  cut in 1" strips&lt;br /&gt;&lt;br /&gt;1. Heat grill and baste  with olive oil spray (or  similar)&lt;br /&gt;2. Brush Mahi Mahi with marinade&lt;br /&gt;3.  When grill is hot,  place Mahi Mahi on grill and turn after about 4  minutes. There are a lot of things that make a good  dip already prepared:&lt;br /&gt;&lt;br /&gt;Hummus&lt;br /&gt;Peanut/ Almond/ Cashew Butter&lt;br /&gt;Ranch  Dressing&lt;br /&gt;Yogurt&lt;br /&gt;Salsa&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;OR you can make up some dips  ahead time too. Garnish with 1 tablespoon finely  chopped   almonds, if desired.&lt;br /&gt;&lt;/p&gt; &lt;h4&gt;&lt;b&gt;&lt;span style="color: rgb(255, 102, 0);"&gt;Raspberry Fruit Dip:&lt;/span&gt;&lt;/b&gt;&lt;/h4&gt;   Puree 1 cup  sweetened  raspberries (aprox. 1 10-ounce package). Spoon  half the  basic recipe  into a serving dish and smooth. Top with half the   raspberry puree and  smooth. Repeat.&lt;br /&gt;&lt;br /&gt;&lt;h4&gt;&lt;b&gt;&lt;span style="color: rgb(255, 102, 0);"&gt;Lemon  Fruit Dip:&lt;/span&gt;&lt;/b&gt;&lt;/h4&gt;   Add zest  of 1  lemon, 1 tablespoon lemon  juice, and 1 extra tablespoon sugar to  the  basic cream cheese fruit dip  recipe.   &lt;h4&gt;&lt;b&gt;&lt;span style="color: rgb(255, 102, 0);"&gt;Marshmallow  Fruit Dip:&lt;/span&gt;&lt;/b&gt;&lt;/h4&gt;      &lt;p&gt;Add  1/2 cup marshmallow creme to the  basic recipe.  &lt;/p&gt; &lt;p&gt;&lt;b&gt;All recipes:&lt;/b&gt;  Chill and serve with assorted  fruit dippers  such as bananas, grapes,  kiwi, apple, pineapple,  strawberries,  raspberries, and papaya, cut  into bite-size pieces, if  necessary. Bagel  bites are good, too. I am serving the Taco Soup with some Nacho   Cheese Tortillas chips I found from Trader Joes. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: arial;"&gt;&lt;br /&gt;This is one of my favorite easy  crock-pot meals.  Probably because it is easy to throw together and you  can really vary it however it suits your tastes, what you have on hand  in your pantry, and whatever dietary needs you may have.   I adapted the  recipe from &lt;a href="http://crockpot365.blogspot.com/2008/02/original-taco-soup-crockpot-recipe.html"&gt;here&lt;/a&gt;...  and I have made it many times with different variations.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size: 130%;"&gt;&lt;span style="font-weight: bold;"&gt;TACO SOUP -  SLOW COOKER&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic; font-weight: bold;"&gt;The Ingredients:&lt;/span&gt;&lt;br /&gt;--2 cans of kindey beans&lt;/span&gt;&lt;/p&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--2 cans of pinto beans&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--2 cans of corn&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--1 large can of diced tomatoes&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--1 can diced green chiles&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--1  packet taco seasoning&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--1 packet ranch dressing mix&lt;br /&gt;--1 32oz  box of broth (veggie or chicken--whatever you prefer)&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--1 lb browned ground turkey or hamburger   (optional.)  I used Trader Joes Veggie Sausage Links&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--shredded cheese, sour cream, diced green  scallions, and/or avocado for embelishment&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;&lt;span style="font-family: arial;"&gt;The Directions:&lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--brown whatever meat  (if you are going to use it) -- I  sometimes add a small diced onion.&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--add to crockpot&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--sprinkle seasoning packets on top of meat&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--drain and rinse the beans and add &lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: arial;"&gt;--add the ENTIRE contents of the corn,   tomato, and green chili cans&lt;br /&gt;--stir.&lt;br /&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: Arial;"&gt;&lt;/span&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;span style="font-family: Arial;"&gt;Cover and cook on low for 8-10 hours or on  high for 4-5. I think  the longer you cook soup, the better, so if you  have the time, opt for  cooking on low. I have some dry white beans that need to be used up and some lasagna noodles.  I found this recipe &lt;a href="http://www.cookingindex.com/recipes/2043/spinach-and-white-bean-lasagna.htm"&gt;here&lt;/a&gt; and decided that I would give it a try....there will be an obvious update to this recipe and I will let you know how our family fares from this dish. I will be adjusting the recipe a little bit by using fresh spinach,  cooking dry white beans instead of canned, and my lasagna noodles are the boil kind .&lt;br /&gt;&lt;/span&gt;&lt;/h3&gt;&lt;br /&gt;&lt;h3&gt;Ingredients&lt;/h3&gt;   &lt;ul&gt;&lt;li&gt;1 tablespoon olive oil&lt;/li&gt;&lt;li&gt;2  carrots diced&lt;/li&gt;&lt;li&gt;2  onions chopped&lt;/li&gt;&lt;li&gt;6  garlic cloves minced&lt;/li&gt;&lt;li&gt;2 cans no-salt-added stewed tomatoes - (14 ½ oz ea)&lt;/li&gt;&lt;li&gt;3 cups sliced mushrooms&lt;/li&gt;&lt;li&gt;1 can cannellini beans - (19 oz) rinsed and drained&lt;/li&gt;&lt;li&gt;1 package frozen chopped spinach - (10 oz) thawed, squeezed dry&lt;/li&gt;&lt;li&gt;9  no-boil lasagna noodles&lt;/li&gt;&lt;li&gt;¼ cup grated Parmesan cheese plus&lt;/li&gt;&lt;li&gt;2 tablespoons grated Parmesan cheese&lt;/li&gt;&lt;/ul&gt;   &lt;h3&gt;Directions&lt;/h3&gt;      &lt;p&gt;Preheat the oven to 350 degrees.&lt;/p&gt;  &lt;p&gt;In a large nonstick saucepan or Dutch oven, heat the oil.  Add the  carrots, onions and garlic; cook, stirring as needed, until softened,  about 5 minutes.&lt;/p&gt;  &lt;p&gt;Stir in the tomatoes, mushrooms, beans and spinach; bring to a boil.   Reduce the heat and simmer, covered, until the vegetables are tender,  about 15 minutes.&lt;/p&gt;  &lt;p&gt;Spoon one-fourth of the tomato mixture in the bottom of a 13— by  9-inch baking pan; top with 3 lasagna noodles.  Repeat the layering  three more times, ending with the tomato mixture.  Sprinkle the cheese  evenly on top.  Bake, covered, 35 minutes.  Uncover and bake, until  bubbling and golden, about 10 minutes longer.  Let stand 10 minutes  before serving.&lt;/p&gt;  &lt;p&gt;This recipe yields 6 servings.&lt;/p&gt;  &lt;p&gt;Per Serving:  285 Calories, 5 g Total Fat, 1 g Saturated Fat, 4 mg  Cholesterol, 280 mg Sodium, 48 g Total Carbohydrate, 109 Dietary Fiber,  15 g Protein, 208 mg Calcium.&lt;/p&gt; I adopted this recipe into our traditions of making it for Christmas Eve dinner served with some of Ric's homemade bread! It is a family favorite.&lt;br /&gt;It is hearty, healthy, and a warm up those toes kind of meal---perfect for a cold Christmas Eve! &lt;br /&gt;&lt;br /&gt;This is one of those recipes that was found in a magazine, clipped out the recipe, and have yet to remember which magazine it came from....so in our home for many years, I have the recipe written on a stained 3x5 card.&lt;br /&gt;&lt;br /&gt;Note:  I have made this recipe following the exact recipe and I have also altered it to be vegetarian (because my DH is a veggie-nut) and I really love it both ways. For a vegetarian version, omit the meat and add an extra can of beans -- or you can add a veggie meat substitute if preferred-- we like without.&lt;br /&gt;This recipe can also be adapted to be made in the crockpot and doubled if needed for larger crowds!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;GREEK CHILI &lt;br /&gt;(recipe as written from that cutout piece of magazine)&lt;br /&gt;&lt;br /&gt;1 pound of ground turkey&lt;br /&gt;1 tsp olive oil&lt;br /&gt;1 large onion chopped&lt;br /&gt;1 tsp garlic powder&lt;br /&gt;1 tsp dried oregano&lt;br /&gt;1/2 tsp dried thyme&lt;br /&gt;2 bay leaves&lt;br /&gt;1/4 tsp black pepper&lt;br /&gt;1 can (14 1/2 oz) diced tomatoes&lt;br /&gt;1 can (14 oz) artichoke hearts, drained&lt;br /&gt;1 can (14 oz) garbanzo beans, drained&lt;br /&gt;1 can (2 1/4 oz) sliced black olives, drained&lt;br /&gt;Crumbled feta cheese to taste&lt;br /&gt;&lt;br /&gt;1. If the meat is frozen, microwave it 2 minutes, uncovered on high, to defrost slightly.  Meanwhile, in a 4 1/2 quart Dutch oven or soup pot, heat the oil on medium. Peel and coarsely chop the onion, adding it to the pot as you chop. Stir occasionally.&lt;br /&gt;&lt;br /&gt;2. Add turkey to pot, raise heat to high and stir from time to time. Turn the partially frozen block over frequently, add garlic powder, oregano, thyme, bay leaves, and black pepper.&lt;br /&gt;&lt;br /&gt;3. Add tomatoes with juice, garbanzo beans, olives &amp; chopped artichokes.  Stir well.&lt;br /&gt;&lt;br /&gt;4. Cook on high til meat is thoroughly cooked. Tossed and served with dressings.   It was delicious.&lt;br /&gt;&lt;br /&gt;Note: For leftovers we used the roasted vegetables on a whole wheat pizza crust and added some more fresh basil and cheese. This recipe will not taste the same if you skip this step. Roasting the garlic gives this hummus a nice mellow yet rich flavor. To do this, wrap garlic head in foil, then place in 350 degree oven (or toaster oven) for 30 minutes.&lt;br /&gt;&lt;br /&gt;Combine all ingredients in food processor or blender and puree until desired smoothness. It is quick and easy.  Sometimes, if I  don't have canned beans in my pantry, I will use beans to soak the night before (or do quick soak method).  The idea is to throw it all into the crockpot and let it cook. &lt;br /&gt;&lt;br /&gt;Today I have:&lt;br /&gt;&lt;ul&gt;&lt;li&gt;15 oz can Canellini Beans&lt;/li&gt;&lt;li&gt;15 oz can Black Beans&lt;/li&gt;&lt;li&gt;15 oz can Red Kidney Beans&lt;/li&gt;&lt;li&gt;15 oz can Garbanzo Beans&lt;/li&gt;&lt;/ul&gt;IDEAS: &lt;br /&gt;You could also use veggie "ground beef" crumbles like morning star or boca crumbles.&lt;br /&gt;What about Corn?   We love using frozen corn too.&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Onion - Chopped&lt;/li&gt;&lt;li&gt;Garlic - Minced&lt;/li&gt;&lt;li&gt;Bell Pepper - Chopped&lt;/li&gt;&lt;li&gt;Carrots -- Chopped&lt;/li&gt;&lt;li&gt;Olive Oil&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;2 32oz containers of vegetable broth&lt;/li&gt;&lt;li&gt;2 15 oz cans of diced tomatoes&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Seasonings:&lt;/li&gt;&lt;li&gt;Chili Powder&lt;/li&gt;&lt;li&gt;Cumin Powder&lt;/li&gt;&lt;li&gt;Fresh Parsley&lt;/li&gt;&lt;/ul&gt;&lt;br /&gt;In a pan, I will saute Onion, Garlic, Carrots, Corn and Bell pepper in some olive oil.  Add seasonings to coat. (Sometimes I skip this step and just put it all straight into the crock.&lt;br /&gt;&lt;br /&gt;Add the vegetables into the crockpot with beans and veggie meat, broth, tomatoes, and seasonings. Instead of using Salsa Verde you could use a green enchilada sauce from the can.  I think this would be good with some fresh chopped tomatoes and  sliced green scallions sprinkled on top after it has baked.  Serve with some yummy homemade guacamole and sour cream.  Yumo!&lt;br /&gt;&lt;br /&gt;Serves 4&lt;br /&gt;Prep 25 min&lt;br /&gt;Bake 20 min&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;1/2 cup plus 2 Tablespoons vegetable oil&lt;br /&gt;8 cloves garlic, thinly sliced&lt;br /&gt;Two 15.5 oz cans cannellini beans, drained&lt;br /&gt;1/2 cup broth&lt;br /&gt;Salt&lt;br /&gt;Twelve 6-inch corn tortillas&lt;br /&gt;2 cups store-bought salsa verde&lt;br /&gt;1 1/2 cups shredded pepper jack cheese&lt;br /&gt;---------------------------------------------------------------------&lt;br /&gt;&lt;br /&gt;1. Preheat the oven to 375.  In medium saucepan, heat 2 tablespoons oil over medium heat. Add the garlic and cook stirring, until just golden brown, about 2 minutes. Stir in the beans and cook for 1 minute, then stir in the broth.  Season with salt and cook, mashing the beans, until softened, 7 minutes.  Let cool slightly.&lt;br /&gt;&lt;br /&gt;2. I substituted the chicken with tofu or the vegetarian chicken and used vegetable broth in place of the chicken broth.&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(102, 255, 153); font-weight: bold;"&gt;Ingredients&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;2 tablespoons extra-virgin olive oil (EVOO)&lt;br /&gt;3 leeks, white and tender green parts split lengthwise and thinly sliced crosswise&lt;br /&gt;5 ribs celery from the heart with leafy tops, thinly sliced&lt;br /&gt;1 bay leaf&lt;br /&gt;Salt and Pepper&lt;br /&gt;One 32-ounce container (4 cups) vegetable broth&lt;br /&gt;2 cups heavy cream&lt;br /&gt;1 pound of veggie chicken or 16oz tub of firm tofu&lt;br /&gt;2 packages of fresh gnocchi (about 24 oz)&lt;br /&gt;1/2 cup chopped fresh flat leaf parsley&lt;br /&gt;3 tablespoons dry sherry (optional)&lt;br /&gt;1 teaspoon sweet smoked paprika&lt;br /&gt;&lt;br /&gt;-----------------------------------------------------------------&lt;br /&gt;&lt;span style="color: rgb(102, 255, 153);"&gt;1. &lt;/span&gt;In a Dutch oven or soup pot, heat the EVOO, 2 turns of the pan, over medium heat. Lightly bash the rosemary sprigs with a rolling pin to help release the powerful aroma and flavour when cooking.&lt;br /&gt;2. Heat the oil in a saucepan and stir in the potatoes and rosemary. Cover with a lid and cook on a low heat for 4-5 minutes. This will create some steam in the pan, preventing the potatoes from sticking to the base. Stir in the leeks and garlic, then cook for a couple of minutes until beginning to soften. Add the stock and bring to a simmer, leaving it to cook for 10 minutes.&lt;br /&gt;3. Remove from the heat, take out the rosemary sprigs and stir in the gorgonzola cheese and Dijon mustard. It doesn't matter if the cheese doesn't melt completely as you now need to place the soup into a blender or food processor and blitz until smooth.&lt;br /&gt;4. Season with salt and pepper, making sure you taste the soup first as gorgonzola is quite a salty cheese. If the consistency seems too thick, add some extra vegetable stock to loosen.&lt;br /&gt;5. Stir in polenta; cook and stir over low heat for 7 minutes. Stir incheese; cook until cheese is melted. Spoon into 4 large or 6 small mounds on individual plates. Combine remaining ingredients in blender or food processor. Add 1/4 cup of liquid from chickpeas. Blend for 3-5 minutes on low until thoroughly mixed and smooth.&lt;br /&gt;&lt;br /&gt;Place in serving bowl, and create a shallow well in the center of the hummus.&lt;br /&gt;&lt;br /&gt;Add a small amount (1-2 tablespoons) of olive oil in the well. This cookie was really yummy! Scrumptious!  He added a little ginger seasoning too.  A perfect fall cookie!&lt;/p&gt;&lt;br /&gt;&lt;p&gt;Here is a simple vegan oatmeal cookie recipe that is so delicious, you won't know they are low  fat.&lt;/p&gt;  &lt;p&gt;&lt;i&gt;Prep time: 20 min; Total time: 45 min&lt;/i&gt;&lt;/p&gt;  &lt;p&gt;&lt;u&gt;Ingredients&lt;/u&gt;&lt;/p&gt;  &lt;p&gt;Dry:&lt;/p&gt;  &lt;ul&gt;&lt;li&gt;1 c. instant oats &lt;/li&gt;&lt;li&gt;1.5 c. spelt flour or whole wheat flour &lt;/li&gt;&lt;li&gt;1 tsp. baking soda&lt;/li&gt;&lt;li&gt;1 tsp. baking powder &lt;/li&gt;&lt;li&gt;1/2 tsp. salt &lt;/li&gt;&lt;li&gt;1 tsp. cinnamon&lt;/li&gt;&lt;/ul&gt;  &lt;p&gt;Wet:&lt;/p&gt;  &lt;ul&gt;&lt;li&gt;1/2 c. applesauce &lt;/li&gt;&lt;li&gt;1/2 c. blackstrap molasses &lt;/li&gt;&lt;li&gt;1/2 c. maple syrup, Grade B &lt;/li&gt;&lt;li&gt;1 tsp. vanilla extract &lt;/li&gt;&lt;li&gt;1 c. raisins&lt;/li&gt;&lt;/ul&gt;  &lt;p&gt;Preheat oven to 350 F. Combine dry ingredients. Add wet ingredients and stir until "just mixed."  Scoop dough onto a cookie sheet (about 2 tbsp per cookie) and bake at 350 F for 12-15 min.&lt;/p&gt;  &lt;p&gt;Makes 20 cookies.&lt;/p&gt;  &lt;p&gt;&lt;i&gt;Per cookie: 77.5 calories, 0.5g fat, 2g fiber, 1.9g protein, 12.3% RDA iron, 4.5% RDA  calcium&lt;/i&gt;&lt;/p&gt;  &lt;p&gt;&lt;u&gt;Tips&lt;/u&gt;&lt;br /&gt;Add more spices! Try allspice, cloves, ground ginger, pumpkin pie spice, or cardamom. The first  time you try them, start with only 1/4 tsp, then taste the cookie dough and add more if desired.&lt;/p&gt;  &lt;p&gt;Use the vegan oatmeal cookie dough raw as a mix-in for cinnamon ice cream or frozen yogurt.&lt;/p&gt;  &lt;p&gt;Frost your cookies. Combine powdered sugar, 1/4-1/2 tsp. vanilla (to taste), and a little bit of  milk or soy milk to make the frosting. Then drizzle it on the tops of your cookies. My husband tried this recipe and it was easy, simple, healthy and delicious.  He started to play around with it a little bit.  He started to use about 2/3 whole wheat flour and 1/3 all purpose and it turned out great! We love that it has simple ingredients: no eggs, no dairy, no preservatives, no sugars or sweetners....very healthy with the freshly ground whole wheat!   Below is the original recipe.  We hope you enjoy it as much as we have too!&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt; Adapted from Jim Lahey, Sullivan Street Bakery&lt;/span&gt;&lt;br /&gt;Time: About 1½ hours plus 14 to 20 hours’ rising&lt;br /&gt;&lt;p&gt;3 cups all-purpose or bread flour, more for dusting&lt;br /&gt;¼ teaspoon instant yeast&lt;br /&gt;1¼ teaspoons salt&lt;br /&gt;Cornmeal or wheat bran as needed.&lt;/p&gt; &lt;p&gt;&lt;span class="bold"&gt;1. &lt;/span&gt; In a large bowl combine flour, yeast and salt. Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees. &lt;/p&gt; &lt;p&gt;&lt;span class="bold"&gt;2. &lt;/span&gt; Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes. &lt;/p&gt; &lt;p&gt;&lt;span class="bold"&gt;3. &lt;/span&gt; Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.&lt;/p&gt; &lt;p&gt;&lt;span class="bold"&gt;4. &lt;/span&gt; At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Add garlic and onions and cook, stirring often, until softened, about 6 to 7 minutes. Add eggplant; stir until coated with oil. Add the bok choy&lt;br /&gt;and tomatoes, season with salt and pepper and cook until bok choy and tomatoes&lt;br /&gt;are wilted, 2 to 3 minutes. Keep warm.&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(0, 204, 204);"&gt;4.&lt;/span&gt; In a large nonstick skillet, heat 1 tablespoon oil over medium heat.&lt;br /&gt;Add the shrimp and fry until the bottoms are golden, 2 to 3 minutes. Using tongs,&lt;br /&gt;gently turn over each shrimp; drizzle the remaining 1 tablespoon oil around the edge&lt;br /&gt;of the skillet. Lower the heat and fry until the other sides are golden, about 1 more&lt;br /&gt;minute. Spoon the reserved sauce into the center of 4 serving plates.
